Curried Quinoa

1 C. quinoa
1 ½ T. vegetable oil
½ onion, diced
1 t. grated fresh ginger root
½ fresh green chile, finely chopped
1 t. turmeric
1 t. coriander
¼ t. cinnamon
1 ¾ C. water
½ C. fresh or frozen peas
salt to taste

Rinse quinoa with cold water. Use a fine mesh filter or coffee filter. Place oil and diced onions in a heavy saucepan. Saute the onions on medium high heat for four to five minutes. Add the ginger root, chile and quinoa. Cook one minute, stirring constantly. Stir in the turmeric, coriander, cinnamon and salt. Cook one minute, stirring constantly. Add the water and bring to a boil. Cover, reduce heat and simmer 15 minutes. Stir in peas. Cover and cook four or five minutes or until peas are tender and all the water has been absorbed. Fluff with a fork before serving.

 



Quinoa Turkey Meatloaf

1 lb. ground turkey
1 large egg
1 T. hot sauce
1 T. Worcestershire sauce
1 t. adobo seasoning*
4 oz. diced Vidalia onion
1 T. olive oil
1/3 C. quinoa
2/3 C. water

Preheat oven to 350 degrees. Put the quinoa and water in a saucepan. Bring to a boil and cook for about 10 minutes. Put the ground turkey and all other ingredients except the quinoa into a large bowl. Mix thoroughly. Place the quinoa in the bowl and mix it in. Place mixture in a baking dish and sprinkle some parsley flakes over the top to add color. Bake until done (depending on size of pan and oven characteristics). Remove and let stand about 20 minutes.
*If you can’t find adobo, use a mixture of cumin, salt and pepper.
